nformative value of ante and post mortem indicators for the detection of biological pork-borne hazards

Abstract :

Food-borne zoonotic hazards control is notably based on meat inspection at slaughterhouse. The advent of scientific risk assessment must conduct decision makers to assess the appropriateness of hazards control methods, notably for the pork food chain. We developped a methodology of hazards hierarchization which showed that high risk scores hazards are characterized by high ratios of non-control. A longitudinal study from farm to slaughterhouse showed high variation of carcasses statuses of contamination according to slaughterhouses and also quantified the transmission of hazards from pig to carcass. The very low informative value of post mortem indicators was confirmed. Hazards transmission from pigs to carcasses was modelled from these data and a scheme for hazards control based on risk profiling was proposed.
